Vegetarian recommendations?

So, I'm trying an experiment where I try to be as vegetarian as possible from now until Sunday. I have some foods picked out accordingly and I think I'll be just fine. But just for fun, does anyone have any recommendations for dishes/meals that are vegetarian? Dairy and eggs accepted. Easier the better! wink

You can basically drop in cooked lentils in place of ground beef. I just had vegan lentil tacos tonight! (And yesterday I used cabbage leaves as the taco shells.) Sprouted lentils can be eaten raw. I like them on salad, in a wrap, or cooked. Or just as they are, raw or roasted.

I love edamame in with marinara and spaghetti (or noodle or your choice) - unshelled.

Oatmeal’s pretty easy to make hearty and vegan too! I prefer making it with soy milk and throw in some nut butter(s) or chia seeds.

In a pinch, a can of beans and salsa, marinara, pizza sauce, etc. Not high bar, but kind of a way to see how legumes perform in different settings. Luckily I live somewhere that does chile well. I can get great sauces, toss them in with beans, and add some lettuce, spinach, onions, etc to taste.

One cool trick is that aquafaba (bean water) can be used in place of egg whites for baking, too. I’ve not done that though so that’s where my experience with that ends. Some chia seeds in warm water make a good binder after some time to set, too.

I love shakshuka! You basically make or just heat up tomato sauce in a wide heavy bottom skillet , then when its nice and hot, crack a few eggs in. you can cover or not, depending how you like your eggs - I try to get them over medium with cooked whites without covering them, cause I think the yellow is so pretty and it turns white if you cover it. Then sprinkle some pepper, salt, and chopped herbs and serve with warm crusty buttered bread or over rice or carb-free, as you like!

Chia pudding is amazing. Soak chia seeds in coconut milk, in a jar overnight. Ratio is as you like but I usually go about 3 parts liquid to chia. In the morning add any fruit, yogurt,  or other tasty bits you want, like chocolate chips, cacao nibs, coconut flakes, slivered almonds, etc. So good.

Also I am obsessed with a fried egg on rice with kimchi.  So simple, so good. I always eat japanese short grain rice when I have rice.

Here's an easy way to make that kind of rice, sometimes sold as sushi rice: rinse whatever quantity you want in cold water. A few times til the water is more clear. Then fill the pot so when the rice is level, and you place your fingertip on the surface of the rice, the water comes to your first knuckle. Bring to a boil, then turn to low and cover and cook for 15 minutes.

I learned this from my host mom when I was an exchange student in Japan. Perfect rice every time.
